  • 8 mini or Persian cucumbers
  • 1 green onion (ends trimmed and finely sliced)
  • 1 ½ tbsp low-sodium soy sauce
  • 1 ½ tbsp rice vinegar or white grape juice vinegar
  • 1 tsp sesame oil
  • 1 tbsp honey or maple syrup
  • 2 large garlic cloves (minced)
  • 1 tsp crushed or full red chili flakes
  • Sesame seeds

Instructions

  1. Wash and dry the cucumbers, removing the ends. To create accordion-style cuts, place each cucumber between two chopsticks and slice diagonally at a 45° angle, then flip and cut at 90°. Cut spiraled cucumbers in half.
  2. In a small bowl, whisk together soy sauce, vinegar, sesame oil, honey (or maple syrup), minced garlic, and chili flakes until well combined.
  3. Pour the dressing over the cucumbers in a large bowl, gently mixing to coat. Garnish with green onions and sesame seeds before serving.
