  • 1/4 cup extra virgin olive oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • 4 cloves garlic
  • 3 roma tomatoes, finely diced
  • 1 bay leaf
  • 1 teaspoon paprika (sweet or smoked)
  • Pinch of saffron threads
  • Salt and pepper to taste
  • 1/4 cup white grape juice
  • 4 boneless, skinless chicken thighs, cut into pieces
  • 2 cups Spanish rice
  • 5 cups chicken broth
  • 1/2 cup frozen peas
  • 1/2 lb jumbo shrimp (peeled, tail on)
  • 1/2 lb mussels (cleaned)
  • 8 oz calamari rings
  • Lemons for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté onion, bell pepper, and garlic until onion is translucent.
  2. Add tomatoes, bay leaf, paprika, saffron, salt, and pepper. Cook for five minutes.
  3. Stir in white grape juice; let simmer for ten minutes.
  4. Add chicken pieces and rice; stir briefly before adding broth without stirring again.
  5. Bring to a boil, reduce heat to medium-low. Cook uncovered for about 15-18 minutes until liquid is mostly absorbed.
  6. Nestle shrimp, mussels, and calamari on top; sprinkle peas over the dish. Cook undisturbed for another five minutes.
  7. Remove from heat; cover with a lid or foil and let rest for ten minutes before serving.
  8. Garnish with parsley and lemon slices before enjoying.
