  • 4 large organic sweet potatoes, peeled & cubed
  • 23 tablespoons extra virgin olive oil
  • 1/2 cup almond milk (or your preferred plant-based milk)
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1 cup organic raisins, soaked & drained
  • 1 1/2 cups raw pecans
  • 2 cups vegan marshmallows

Instructions

  1. Preheat your oven to 400°F (200°C). Boil the peeled and cubed sweet potatoes in a large pot of water for about 15 minutes until tender.
  2. Drain the sweet potatoes and transfer them to a mixing bowl. Add olive oil, almond milk, brown sugar, maple syrup, vanilla extract, cinnamon, nutmeg, allspice, and raisins. Mash until smooth.
  3. Spread the mixture into a greased baking dish. Top with vegan marshmallows and raw pecans. Drizzle with extra maple syrup.
  4. Bake for 70-90 minutes until bubbly and golden brown on top.
