  • 1/3 cup brown sugar
  • 1 tbsp cinnamon
  • 1 3/4 cups all-purpose flour
  • 1 cup brown sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 1 tsp vanilla extract
  • 3/4 cup milk
  • 1/3 cup melted butter
  • 1/2 cup sourdough discard

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a small bowl, mix together brown sugar and cinnamon for the swirl.
  3. Combine all-purpose flour, remaining brown sugar, baking powder, and salt in a medium bowl.
  4. In another bowl, whisk egg, milk, melted butter, vanilla extract, and sourdough discard until smooth.
  5. Gently mix wet ingredients into dry ingredients until just moistened.
  6. Pour half of the batter into the loaf pan; sprinkle with three-quarters of the cinnamon sugar mixture.
  7. Layer the remaining batter on top and add the rest of the cinnamon mixture.
  8. Swirl through the batter gently with a knife.
  9. Bake for 45 to 50 minutes or until a toothpick comes out clean.
  10. Let cool for about 20 minutes before transferring to a wire rack.
