  • 175 grams bread flour
  • 175 grams all-purpose flour
  • 110 grams active sourdough starter
  • 20 grams sugar
  • 10 grams neutral oil
  • 7 grams salt
  • 12 grams ground cinnamon
  • 65 grams light brown sugar

Instructions

  1. In a large bowl, combine water, bread flour, all-purpose flour, sourdough starter, sugar, oil, and salt. Mix until fully combined.
  2. Cover the bowl and let the dough rest for 30 minutes.
  3. Perform 2-3 sets of stretch and folds every 30 minutes until dough strengthens.
  4. Allow the dough to bulk ferment at room temperature until nearly doubled (about 6 hours).
  5. Chill the dough in the fridge for at least 2 hours or overnight.
  6. Prepare filling by mixing cinnamon and brown sugar; shape dough into a rectangle and layer filling.
  7. Roll up the dough like an envelope and place seam-side down in a parchment-lined loaf pan for its second rise (2-4 hours).
  8. Preheat oven to 400°F (200°C) with steam by placing an oven-safe dish filled with water on the bottom rack.
  9. Score the loaf and bake for about 50 minutes until golden brown; cool before slicing.
