Ingredients

Scale
  • 3/4 cup smooth peanut butter (188g)
  • 1/2 cup unsalted butter, softened (113g)
  • 1/2 cup white sugar (100g, plus extra for coating)
  • 1/2 cup packed brown sugar (110g)
  • 1/4 teaspoon salt
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla essence
  • 1 1/2 cups plain flour (180g)
  • 1/2 teaspoon baking soda
  • 36 unwrapped chocolate kisses

Instructions

  1. In a large mixing bowl, cream together smooth peanut butter and softened unsalted butter until well combined. Add white and brown sugars, beating until fluffy.
  2. Mix in a room-temperature egg and vanilla essence until smooth.
  3. In another bowl, whisk together plain flour, baking soda, and salt. Gradually combine this dry mixture with the wet ingredients until just mixed; avoid overmixing.
  4. Roll tablespoon-sized portions of dough into balls and coat them in white sugar before placing them on a parchment-lined baking sheet.
  5. Bake in a preheated oven at 350°F (175°C) for about 8 minutes. Remove from oven and press an unwrapped chocolate kiss into the center of each cookie immediately after baking.
  6. Let cool on a wire rack before serving.
