  • 50 grams active sourdough starter
  • 10 grams salt
  • 50 grams sugar
  • 100 grams chocolate chips
  • 60 grams vegan marshmallows
  • 56 grams unsalted butter
  • 4 graham crackers, crushed

Instructions

  1. Mix flour, water, sourdough starter, sugar, and salt until combined. Cover and let rest at room temperature for about 30 minutes.
  2. Perform stretch and folds on the dough every 30 minutes for 1-2 hours, incorporating chocolate chips and vegan marshmallows.
  3. Cover the dough and let it rise overnight (about 10-14 hours).
  4. Prepare the filling by melting the butter and mixing with crushed graham crackers.
  5. Shape the dough into a square, spread with filling, roll tightly, and place in a proofing basket. Refrigerate for at least eight hours.
  6. Preheat your oven and Dutch oven to 450℉.
  7. Score the dough and bake covered for 30 minutes; then uncover and bake for an additional 10-15 minutes until golden brown.
