  • 6 oz unsalted butter, at room temp (12 tbsp)
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg yolk, at room temp
  • 1 tsp vanilla extract
  • 1/4 cup brown sugar, for filling
  • Pinch table salt, for filling
  • 1/2 tsp pumpkin pie spice, for filling
  • 1/4 cup whole milk, for filling
  • 1/2 cup pumpkin purée, for filling
  • 1/4 tsp vanilla extract, for filling
  • 1/3 cup coarse sugar, for rolling

Instructions

  1. In a large bowl, whisk together flour, pumpkin pie spice, and salt.
  2. In another bowl, beat cream cheese and butter until creamy.
  3. Add granulated sugar, brown sugar, egg yolk, and vanilla; mix until well combined.
  4. Gradually add dry ingredients to the wet mixture; stir until just combined.
  5. Chill the dough for about 30 minutes in the refrigerator.
  6. Prepare the filling by whisking together all filling ingredients until smooth.
  7. Roll chilled dough into balls and coat in coarse sugar; make an indentation in each ball for filling.
  8. Spoon filling into indentations and bake at 350°F (175°C) until golden brown.
