  • 1 medium onion (coarsely chopped)
  • 2 garlic cloves (coarsely chopped)
  • 1 celery stalk (coarsely chopped)
  • 1 carrot (coarsely chopped)
  • 1 pound ground chuck beef
  • 2 cans (14 ounces each) crushed cherry tomatoes
  • 1/4 cup chopped parsley
  • 8 basil leaves (chopped)
  • Salt and pepper to taste
  • 1 lb pasta (such as mezzi rigatoni or pappardelle)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Sauté onion and garlic until soft, about 8 minutes.
  2. Add coarsely chopped celery and carrot; sauté for an additional 5 minutes.
  3. Increase heat to high, add ground beef, breaking it up until no longer pink, around 10 minutes.
  4. Stir in crushed cherry tomatoes, parsley, and basil. Season with salt and pepper. Let simmer on low for about 30 minutes.
  5. Cook pasta according to package instructions until al dente; drain and combine with the sauce.
  6. Serve hot with a drizzle of olive oil and freshly grated cheese if desired.
