1 lb medium shrimp, peeled and deveined
1 tablespoon olive oil
2 cups cooked jasmine or brown rice
½ cup mayonnaise
1–2 tablespoons sriracha (to taste)
1 teaspoon lime juice
1 avocado, sliced
1 cup shredded carrots
1 cup cucumber slices

1 teaspoon smoked paprika
¼ teaspoon cayenne pepper (optional)
Instructions
Prepare the spicy mayo by mixing mayonnaise, sriracha, and lime juice in a small bowl. Adjust sriracha based on desired heat.
In a skillet over medium-high heat, warm olive oil. Toss shrimp with smoked paprika, garlic powder, onion powder, salt, black pepper, and optional cayenne pepper. Cook until pink and opaque (about 4-5 minutes).
Assemble bowls starting with rice as the base. Layer cooked shrimp on top followed by shredded carrots, avocado slices, cucumber chunks, and green onions.
Drizzle generously with spicy mayo before serving.
