  • 21/4 cups mirepoix (or equal parts diced carrots, celery, and onion)
  • 4 cups chopped baby gold potatoes
  • 4 cups chicken stock
  • 3 cups milk
  • 2 cups shredded extra-sharp Cheddar cheese

Instructions

  2. In the same pot, melt 1 tablespoon of butter and sauté the mirepoix until tender. Add minced garlic towards the end.

  4. In another pot, melt remaining butter, whisk in flour to create a roux, then gradually add milk until thickened.
  5. Combine cream mixture with the soup base and stir in shredded cheese until melted. Return cooked sausage to the pot.
