  • 1/3 cup light brown sugar, packed
  • 1 and 1/4 tsp cinnamon

  • 12 tsp lemon juice (to taste)
  • 2 tsp cornstarch
  • 2 tsp water
  • 3 cups cinnamon graham cracker crumbs
  • 1/2 cup + 3 tbsp salted butter, melted
  • 32 ounces cream cheese, at room temperature
  • 1 and 1/2 cups granulated sugar
  • 4 large eggs, at room temperature
  • 2 tsp vanilla extract
  • 1 and 1/2 tsp cornstarch
  • 3/4 cup full-fat sour cream, at room temperature
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp ground cloves
  • 1/4 cup all-purpose flour
  • 1/2 cup old-fashioned whole rolled oats
  • 1/4 cup brown sugar, packed
  • 1/2 tsp cinnamon
  • 1/8 tsp salt
  • 1/4 cup cold salted butter, cubed
  • 1 cup granulated sugar (for caramel)
  • 6 tbsp salted butter, cubed (for caramel)
  • 1/2 cup + 1 tbsp heavy cream
  • pinch of flaky sea salt

Instructions

  1. Prepare the apple filling: Cook sliced apples with butter, apple cider, brown sugar, spices, lemon juice, cornstarch, and water until tender.
  2. Make the crust by mixing graham cracker crumbs with melted butter and pressing into a springform pan. Bake until set.
  3. For the cheesecake filling, beat cream cheese until smooth; add sugar gradually and mix in eggs one at a time. Stir in remaining ingredients.
  4. Assemble by layering half the cheesecake batter into the crust, followed by the apple filling and remaining batter.
  5. Create a water bath to bake evenly without cracks. Bake for about 90 minutes or until slightly wobbly in the center.
  6. Cool slowly before refrigerating overnight. Top with crumble and salted caramel sauce before serving.
