  • ¼ cup extra-virgin olive oil (divided)
  • 2 tablespoons melted butter
  • ⅓ cup extra virgin olive oil
  • 23 sprigs fresh rosemary (minced)
  • 3 garlic cloves (minced)

Instructions

  1. Activate the yeast by mixing it with honey and warm water. Let it rest for about 5-10 minutes until foamy.
  2. Combine flour and salt with the yeast mixture to form a rough dough.
  3. Coat the dough with olive oil, cover, and refrigerate overnight.
  4. The next day, knead briefly and portion into twelve muffin-sized pieces.
  5. Place dough portions in greased muffin tins, let rise for about 2 hours.
  6. Prepare topping by heating olive oil with minced rosemary and garlic; let cool slightly.
  7. Preheat oven to 450°F. Make dimples in each muffin’s surface and spoon topping over them.
  8. Bake for approximately 20 minutes until golden brown. Brush with melted butter after baking.
