  • 1 whole or half bone-in turkey breast (or boneless)
  • ½ cup unsalted butter, softened
  • 3 cloves garlic, minced
  • 1 ½ teaspoons fresh thyme, chopped
  • 1 ½ teaspoons fresh rosemary, chopped
  • ½ teaspoon fresh sage, chopped
  • Salt and pepper

Instructions

  1. Thaw the turkey breast in the refrigerator if frozen. Remove it from the fridge about 20 minutes before cooking.
  2. In a bowl, mix softened butter with garlic, salt, pepper, thyme, rosemary, and sage until smooth.
  3. Pat the turkey dry with paper towels and season with salt and pepper. Loosen the skin and spread herb butter underneath it.
  4. Preheat oven to 325°F (165°C). Place turkey in a roasting pan and roast for about 14–15 minutes per pound until it reaches an internal temperature of 165°F (74°C).
  5. Let rest for at least 15 minutes before carving.
