  • 9 Roma tomatoes (sliced lengthwise)
  • 1 yellow onion (diced)
  • 4 garlic cloves (minced)
  • 1 cup fresh basil (roughly chopped)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp unsalted butter
  • 1 tbsp fresh thyme (minced)
  • 1 tsp Kosher salt
  • ½ tsp ground black pepper
  • 1 tbsp sugar
  • 1 can (28 oz) crushed San Marzano tomatoes
  • 2 cups chicken stock
  • â…” cup heavy cream

Instructions

  1. Preheat your oven to 375°F.
  2. Spread sliced tomatoes on a baking sheet, drizzle with olive oil, season with salt and pepper, and roast for one hour.
  3. In a large pot, melt butter over medium-high heat, add diced onion, and sauté until translucent (about five minutes).
  4. Stir in minced garlic, thyme, salt, and pepper; cook for another minute until fragrant.
  5. Add the crushed tomatoes, basil, and sugar; simmer for ten minutes.
  6. Stir in roasted tomatoes and chicken stock; let simmer for 30 minutes.
  7. Purée the soup until smooth using an immersion blender or regular blender.
  8. Stir in heavy cream before serving.
