  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • Zest of 1 lemon
  • Juice of 1/2 lemon

Instructions

  3. Cook pasta according to package instructions until al dente, reserving about 1 cup of starchy water before draining.
  4. Squeeze the roasted garlic from its skins into a bowl; mix with ricotta, Parmesan, lemon zest, and juice until smooth.
  5. Combine drained pasta with the ricotta mixture and roasted tomatoes. Add reserved pasta water gradually until desired creaminess is achieved.
