  • 1 tsp olive oil
  • 2 pounds red potatoes (washed and cut into quarters)
  • Kosher salt
  • 6 tablespoons butter
  • 3/4 cup half and half
  • Fresh ground pepper

Instructions

  1. Preheat your oven to 375°F. Cut off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for about an hour until golden.
  2. In a large pot, cover washed and quartered red potatoes with cold water, add salt, bring to a boil, and simmer for about 15 minutes until fork-tender.
  3. Drain the potatoes and return them to the pot with roasted garlic cloves.
  4. Warm half and half and butter until melted, pour over potatoes, season with salt and pepper, then mash to your desired consistency.
