  • 350 grams filtered water
  • 500 grams bread flour
  • 10 grams salt
  • 1 head of garlic
  • 14 grams olive oil
  • 3 grams fresh rosemary, chopped finely
  • Optional: 175 grams Asiago or Gruyere cheese, cut into cubes or shredded

Instructions

  1. Preheat oven to 400°F (200°C). Slice the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 30 minutes until soft.
  2. In a large bowl, dissolve the sourdough starter in water. Gradually add bread flour and salt; mix until no dry spots remain.
  3. Squeeze roasted garlic into the dough along with rosemary and optional cheese. Fold gently to combine.
  4. Cover the bowl with a damp towel and let rise at room temperature for about 12 hours.
  5. Turn dough onto a floured surface; shape it into a round loaf and let rest for 30 minutes.
  6. Place shaped loaf in a proofing basket lined with flour; cover and let rise for about two hours.
  7. Preheat oven to its highest setting with a Dutch oven inside. Transfer loaf using parchment paper; score the top.
  8. Bake covered for 30 minutes, then uncover and bake for an additional 15 minutes until golden brown.
  9. Cool on a wire rack before slicing.
