  • 2 tbsp olive oil
  • 1 tbsp maple syrup
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • Salt & pepper, to taste
  • 1 cup ricotta cheese
  • 2 tbsp heavy cream
  • 1 tsp lemon zest
  • 2 tbsp hot honey
  • Fresh herbs (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss carrots in olive oil, maple syrup, cumin, smoked paprika, salt, and pepper until well-coated. Arrange in a single layer on the baking sheet.
  3. Roast for 25–30 minutes, flipping halfway through until tender and caramelized.
  4. In a food processor or using a hand mixer, blend ricotta, heavy cream, and lemon zest until smooth.
  5. Spread whipped ricotta on a serving platter and top with roasted carrots. Drizzle with hot honey and garnish with fresh herbs if desired.
