  • 3 carrots, peeled
  • 2 celery stalks
  • 1 potato, peeled
  • 2 garlic cloves, minced
  • 2 tablespoons tomato paste

  • 4 cups vegetable stock or broth
  • 1 cup red lentils
  • Juice and zest of 1/2 lemon

Instructions

  1. Prepare the vegetables by dicing them into uniform pieces.
