  • 2 Garlic, cloves, minced
  • 34 Thyme, sprigs
  • 2 tbsp Olive Oil
  • 1 Eggplant, thinly sliced
  • 1 Yellow Squash, thinly sliced
  • 1 Zucchini, thinly sliced
  • 1 Red Bell Pepper, thinly sliced
  • 23 Potatoes, medium size, thinly sliced
  • Salt and Black Pepper
  • Oil Spray
  • 1 tbsp Unsalted Butter
  • 1 tbsp All-Purpose Flour
  • 1 Cup Milk, 2% or whole milk
  • 1/8 tsp Nutmeg

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Par-cook sliced potatoes by boiling them in salted water for 3-4 minutes. Drain and set aside.
  3. Prepare the béchamel sauce by melting butter, whisking in flour, and gradually adding warm milk until thickened. Season with nutmeg, salt, and black pepper.
  4. In a baking dish, spread a layer of tomato sauce mixed with garlic, thyme, chili flakes, and olive oil.
  5. Drizzle some béchamel over the tomato layer and arrange sliced veggies on top in a spiral pattern.
  6. Cover with parchment paper and bake for 55-60 minutes until tender.
