  • 15 oz can pure pumpkin
  • 2 Tbsp flour (for streusel)
  • 2 Tbsp brown sugar (for streusel)
  • 1 tsp granulated sugar (for streusel)
  • 1/4 tsp cinnamon (for streusel)
  • 1.5 Tbsp cold butter (for streusel)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a muffin pan with cupcake liners.
  2. In a large bowl, combine carrot cake mix and pure pumpkin until fully mixed.
  3. In another bowl, prepare the streusel by mixing flour, brown sugar, granulated sugar, cinnamon, and cold butter until crumbly.
  4. Scoop the muffin batter into each lined cup until three-quarters full and sprinkle with streusel topping.
  5. Bake for about 20 minutes or until a toothpick comes out clean.
  6. Cool in the pan for 5 minutes before transferring to a wire rack.
