  • 1/2 cup butter (room temperature)
  • 2 cups granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup milk
  • 1/2 cup cold butter, cubed (for crumb topping)
  • 1 cup light brown sugar (for crumb topping)
  • 1 cup flour (for crumb topping)
  • 1 teaspoon cinnamon (for crumb topping)
  • 1/2 teaspoon nutmeg (for crumb topping)

Instructions

  1. Preheat oven to 350°F and grease a 9 x 13-inch baking dish.
  2. In a large bowl, whisk together flour, baking powder, salt, and spices.
  3. In another bowl, beat the butter and pumpkin puree until mixed. Add sugar, eggs, and vanilla until combined.
  4. Gradually add the dry mixture alternately with milk to the pumpkin mixture; mix until just combined.
  5. For the crumb topping, mix cold butter with brown sugar and flour until crumbly.
  6. Layer half of the batter in the prepared dish, top with half of the crumbs, add remaining batter and finish with crumbs. Bake for 45-55 minutes.
