  • 4 sweet onions
  • ½ cup apple cider
  • 1½ cups ricotta cheese
  • 1â…“ cups pumpkin puree
  • 2 cups mozzarella cheese
  • 2 sheets frozen puff pastry
  • Fresh sage leaves

Instructions

  1. Cook turkey bacon in a large skillet until crisp. Remove and set aside.
  2. In the same skillet, caramelize sliced onions with salt and pepper over medium-low heat for about 25–30 minutes. Add apple cider towards the end.
  3. Preheat oven to 400°F (200°C). Roll out puff pastry on a floured surface, score edges, and prick the center.
  4. In a bowl, mix ricotta cheese and pumpkin puree with seasoning; spread on pastry. Top with caramelized onions and mozzarella.
  5. Scatter fresh sage over the filling. Bake for 25–30 minutes until golden.
