  • ½ cup brown sugar packed
  • 1 large egg yolk (room temperature)
  • 1 teaspoon vanilla extract
  • ⅓ cup coarse sugar for rolling
  • 1 large egg (room temperature)
  • ¼ cup brown sugar
  • Pinch table salt
  • ¼ cup whole milk
  • ½ cup pumpkin puree
  • ¼ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cookie sheet with parchment paper.
  2. In a bowl, beat cream cheese and butter until smooth, then add granulated and brown sugar until combined.
  3. Mix in egg yolk and vanilla extract. Gradually fold in flour, pumpkin spice, and salt.
  4. In another bowl, whisk together pumpkin filling ingredients: egg, brown sugar, salt, pumpkin spice, milk, pumpkin puree, and vanilla extract.
  5. Scoop dough into balls and roll in coarse sugar before placing on the baking sheet. Create an indent in each ball and fill with pumpkin mixture.
  6. Bake for about 15 minutes or until edges are golden.
