  • 1 cup fresh or frozen raspberries
  • 2/3 cup granulated sugar
  • 1 1/2 tablespoons cornstarch
  • 1 tablespoon water
  • 1 tablespoon maple syrup
  • 1/2 tablespoon dairy-free milk

Instructions

  1. Prepare the raspberry filling by combining raspberries, sugar, cornstarch, water, and maple syrup in a saucepan over medium heat. Cook until slightly thickened.
  2. Roll out the puff pastry on a floured surface and cut into triangles.
  3. Place a spoonful of filling at the wide end of each triangle and roll towards the pointy end, tucking in edges.
  4. Preheat oven to 375°F (190°C) and place croissants on a lined baking sheet. Brush with dairy-free milk.
  5. Bake for 25-30 minutes until golden brown and puffy.
