2 tablespoons grated or minced fresh ginger
4 cloves garlic, pressed or minced
6 cups vegetable broth
2 tablespoons soy sauce
16 to 20 ounces frozen potstickers
5 scallions, thinly sliced and divided
3 baby bok choy, ends trimmed off and leaves separated
2 teaspoons toasted sesame oil

Instructions
In a large stockpot, heat 1 tablespoon of olive oil over medium-high heat. Sauté sliced shiitake mushrooms until browned, about 3 minutes.
Add another tablespoon of olive oil along with minced garlic and ginger; sauté for an additional 1-2 minutes until fragrant.
Pour in vegetable broth and soy sauce, bringing the mixture to a gentle boil. Stir in frozen potstickers, half the scallions, and bok choy leaves. Cook for 3-4 minutes until potstickers are heated through.
Stir in toasted sesame oil and freshly-ground black pepper; adjust seasoning if needed.
Serve hot, garnished with remaining scallions and optional toppings like chili crisp or toasted sesame seeds.
