  • 3/4 cup water
  • 1/2 cup liquid glucose/light corn syrup
  • Few drops black gel food coloring
  • 6 Granny Smith apples (or 12 small apples)

Instructions

  1. Prepare by greasing a piece of baking paper on a tray.
  2. Insert bamboo skewers into each apple.
  3. In a saucepan, combine sugar, water, corn syrup, and black gel food coloring over medium heat until dissolved.
  4. Simmer without stirring; wash down the sides with water to prevent crystallization.
  5. Cook until reaching hard crack stage (150ºC/310ºF).
  6. Dip each apple into the caramel mixture and swirl for an even coating.
  7. Place dipped apples on the prepared tray to cool completely.
