  • 10.5 oz (300g) dark chocolate, chopped
  • 3 large eggs
  • 1 ¼ cups (250g) granulated sugar
  • 1 cup (120g) all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 teaspoons almond extract
  • 1 cup (130g) pistachios, roughly chopped
  • 8 oz (227g) white chocolate, finely chopped
  • ½ cup (120g) heavy cream
  • 3 tablespoons pistachio paste
  • 1 pinch salt
  • ½ teaspoon almond extract (optional)

Instructions

  1. Preheat your oven to 335°F (170°C). Line a 9-inch square baking pan with parchment paper.
  2. In a large bowl, whisk together the eggs and sugar until pale and thick.
  3. Melt the butter and dark chocolate together in a microwave-safe bowl, stirring until smooth.
  4. Combine the melted chocolate mixture with the egg-sugar blend, whisking gently.
  5. Stir in vanilla and almond extracts, then fold in sifted flour and salt until no streaks remain.
  6. Gently fold in chopped pistachios, pour into the prepared pan, and smooth the top.
  7. Bake for 20-25 minutes until shiny and slightly cracked on top. Cool completely.
  8. For ganache, heat cream until bubbling, pour over white chocolate, let sit for one minute, then stir until smooth. Add pistachio paste and salt.
  9. Allow ganache to cool to room temperature before spreading it over cooled brownies.
