  • 2 tablespoons reduced-sodium soy sauce

  • 2 garlic cloves (minced)
  • 1 teaspoon fresh ginger (minced)
  • 1/4 teaspoon pepper
  • 1/2 cup reduced-sodium soy sauce
  • 1/3 cup water
  • 1/4 cup brown sugar
  • 1/4 cup reserved pineapple juice
  • 2 garlic cloves (minced)
  • 1/2 teaspoon fresh ginger (minced)
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Instructions

  1. Preheat the oven to 500°F.
  2. In a large bowl, mix ground chicken, panko breadcrumbs, crushed pineapple, milk, soy sauce, green onions, garlic, ginger, and pepper until just combined.
  3. Form the mixture into golf ball-sized meatballs (about 21 total) and place them on a baking sheet.
  4. Bake for 15 minutes or until the internal temperature reaches 165°F.
  5. For the teriyaki sauce, combine soy sauce, water, brown sugar, reserved pineapple juice, garlic, and ginger in a skillet over medium heat; whisk until sugar dissolves.
  6. Mix cornstarch and water in a bowl; add to the sauce and simmer until thickened (about 5 minutes).
