  • 1 tbsp vegetable oil
  • 11 ounces kielbasa (sliced) or turkey sausage
  • 1 yellow onion (diced)
  • 2 carrots (peeled and cut into half-moons)
  • 1 garlic clove (minced)
  • 1 tsp sweet paprika
  • 1 tsp ground cumin
  • 5 cups chicken broth
  • ¼ head savoy cabbage (cored and chopped)
  • 3 tbsp cheese spread (at room temperature)
  • 12 pierogi (cheese and potato filling; feel free to add more if you like!)
  • 3 tbsp chopped fresh dill
  • Freshly ground black pepper

Instructions

  1. Prepare all ingredients by slicing the kielbasa, dicing the onion, chopping the cabbage, peeling and cutting the carrots into half-moons, mincing garlic, and chopping fresh dill.
  2. In a large pot over medium heat, add vegetable oil. Once hot, sauté sliced kielbasa until browned (about 5 minutes) then remove from pot.
  3. Add minced garlic, diced onion, and carrots to the pot; sauté until softened (about 3 minutes). Stir in sweet paprika and ground cumin.
  4. Pour in chicken broth and bring to a boil. Add chopped cabbage; cover and simmer for about 10 minutes.
  5. Stir in cheese spread until combined. Gently add pierogi; boil until they float (3-5 minutes for fresh; up to 8 for frozen).
  6. Turn off heat; stir in kielbasa and fresh dill. Season with freshly ground black pepper.
