  • 1 ½ tbsp avocado oil
  • 2 ½ lb beef tenderloins
  • 1 tsp salt
  • ½ tsp pepper
  • ¼ cup yellow onion (thinly sliced)
  • 1 tsp fresh rosemary (minced)
  • ⅓ cup brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 3 large peaches (pitted, peeled, and diced)

Instructions

  1. Preheat your oven to 375℉. Heat avocado oil in a large oven-safe skillet over high heat.
  2. Season the beef with salt and pepper and sear it for about 3-4 minutes on each side until browned. Remove from the skillet.
  3. In the same skillet, reduce heat to medium-low and sauté onions and rosemary until golden.
  4. Add brown sugar, apple cider vinegar, Dijon mustard, and diced peaches; mix well.
  5. Return the beef to the skillet with the glaze and bake for about 10 minutes until it reaches an internal temperature of 145℉.
  6. Let rest for 5-10 minutes before slicing.
