  • 200 g granulated sugar
  • 50 g Dutch processed cocoa powder
  • 160 g all-purpose flour
  • 1 tsp instant espresso powder
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 120 g sour cream (room temperature)
  • 75 g vegetable oil
  • 2 large eggs (room temperature)
  • 1 ½ tsp vanilla extract
  • 6 Oreo cookies
  • 200 g butter (cool room temperature)
  • 315 g powdered sugar
  • 1 tsp vanilla extract
  • 2 tsp whole milk (room temperature)
  • 12 Oreos for decoration + extra for crumbling on top

Instructions

  1. Preheat your oven to 180°C (350°F) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, cocoa powder, sugar, espresso powder, baking powder, baking soda, and salt.
  3. In another bowl, mix boiling water, sour cream, vegetable oil, eggs, and vanilla extract until smooth.
  4. Gradually combine the wet mixture into the dry ingredients; stir gently until just combined.
  5. Fill cupcake liners two-thirds full and bake for 20-22 minutes or until a toothpick comes out clean.
  6. Allow cupcakes to cool completely before preparing the frosting by beating together butter and powdered sugar until fluffy; mix in vanilla extract and milk.
  7. Fold in crushed Oreos into the frosting and then frost cooled cupcakes.
