Whip up these easy One Pan Chicken & Pineapple Tacos for a quick weeknight dinner that’s bursting with flavor. Try them tonight!

  • 4 skinless boneless chicken thighs
  • 2 tbsp chipotle paste
  • 2 tbsp runny honey
  • 1 1/2 tsp tomato puree
  • 1 tsp salt
  • 2 large garlic cloves
  • 200g fresh pineapple chunks
  • 1 small shallot
  • Juice of 1 lime, plus extra wedges for serving
  • Small handful fresh coriander, roughly chopped
  • 1 ripe avocado, cubed
  • 8 small corn or flour tortillas

Instructions

  1. Preheat the oven to 200 degrees Celsius.
  2. In a bowl, whisk together chipotle paste, honey, tomato puree, salt, and crushed garlic. Add chopped chicken and marinate for at least 15 minutes.
  3. Spread marinated chicken and pineapple on a baking tray. Roast for about 30 minutes until cooked through.
  4. While roasting, prepare shallot and avocado.
  5. Assemble tacos by squeezing lime juice over the chicken mixture and topping with coriander and avocado cubes before serving in warm tortillas.
