  • 2 boneless, skinless chicken breasts, diced
  • 1 cup pineapple chunks
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Juice of 1 lime
  • 8 small corn or flour tortillas
  • ½ cup red onion, finely chopped
  • ½ cup fresh cilantro, chopped
  • 1 avocado, diced
  • 1 jalapeño, sliced (optional)
  • Lime wedges, for garnish

Instructions

  1. Heat olive oil in a pan over medium heat. Add diced chicken with spices (cumin, paprika, garlic powder, onion powder, chili powder, salt, and pepper). Cook until golden brown (5–7 minutes).
  2. Stir in pineapple chunks and sauté until caramelized.
  3. Warm tortillas in a dry skillet or microwave until pliable. Fill each tortilla with the chicken-pineapple mixture and top with red onion, avocado, cilantro, jalapeño slices (if desired), and a squeeze of lime juice.
  4. Serve immediately with lime wedges.
