  • 1/3 cup balsamic vinegar
  • 2 Tbsp honey
  • 8 oz grape tomatoes
  • 8 oz fresh mozzarella balls
  • Fresh basil (for garnish)
  • Avocado oil or olive oil
  • 2 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1 Tbsp Dijon mustard
  • Kosher salt
  • Fresh black pepper

Instructions

  1. Preheat oven to 400°F.
  2. In a bowl, whisk together balsamic vinegar, honey, oil, minced garlic, Italian seasoning, salt, and pepper.
  3. In another bowl, mix grape tomatoes, mozzarella balls, basil, salt, and pepper.
  4. Heat oil in an oven-safe skillet over medium-high heat. Season chicken with salt and pepper and sear for 1-2 minutes on each side until golden brown.
  5. Pour balsamic sauce over chicken and top with tomato-mozzarella mixture.
  6. Bake uncovered for 18-23 minutes until chicken reaches 165°F. Let rest before serving.
