  • 3 large eggs
  • 1 cup vegetable oil
  • 2 1/4 cups granulated sugar
  • 3 teaspoons vanilla extract
  • 2 cups grated zucchini
  • 1 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 325°F (165°C). Grease two 8×4 inch loaf pans and dust with flour.
  2. In a mixing bowl, sift together the flour, salt, baking soda, baking powder, and cinnamon.
  3. In another bowl, whisk together the eggs, vegetable oil, sugar, and vanilla until well combined.
  4. Gradually add the dry ingredients to the wet mixture and fold gently until just combined. Avoid over-mixing.
  5. Fold in the grated zucchini and walnuts if using until evenly distributed.
  6. Divide the batter evenly between the prepared loaf pans.
  7. Bake for 60 to 70 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow loaves to cool in pans for about 10 minutes before transferring them to a wire rack to cool completely.
