  • 7 oz sliced mushrooms (200g)
  • 2 cloves minced garlic
  • 2 cups fresh baby spinach
  • 3 oz mozzarella cheese (80g)
  • Salt and black pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Prepare the filling: In a skillet, melt butter over medium heat. Sauté sliced mushrooms until golden brown (5-7 minutes). Add minced garlic and thyme; cook for another minute. Stir in spinach until wilted.
  2. Preheat oven to 375°F (190°C). Season chicken breasts with salt and pepper, then create pockets by slicing horizontally.
  3. Stuff each pocket with the mushroom mixture and mozzarella cheese.
  4. In an oven-safe skillet, heat olive oil over medium-high heat. Sear stuffed chicken for about 3-4 minutes on each side until golden brown.
