  • 1 cup (240g) almond butter
  • 2 tbsp (42g) honey
  • 1/4 cup (30g) vanilla protein powder
  • 1/4 tsp peppermint extract
  • 1/4 cup (40g) mini dark chocolate chips
  • 12 tbsp (15-30ml) unsweetened almond milk (if needed)

Instructions

  1. In a large mixing bowl, combine rolled oats, almond butter, honey, vanilla protein powder, and peppermint extract.
  2. If the mixture is too dry, gradually add unsweetened almond milk until the desired consistency is reached.
  3. Fold in mini dark chocolate chips gently.
  4. Scoop out tablespoon-sized portions and roll into balls.
  5. Place on a parchment-lined baking sheet and chill in the fridge for at least 20 minutes to firm up.
  6. Store in an airtight container in the refrigerator for up to a week.
