  • 1 large egg
  • 2 tablespoons Meyer lemon juice
  • 2 teaspoons vanilla extract
  • Heavy cream (for brushing)
  • 1 1/2 cups powdered sugar
  • 2 tablespoons Meyer lemon juice (for glaze)
  • 1 teaspoon Meyer lemon zest (for glaze)
  • 12 tablespoons heavy cream (for glaze)

Instructions

  1. Preheat your oven to 400˚F (200˚C).
  2. In a large bowl, mix together flour, sugar, baking powder, Meyer lemon zest, and salt.
  3. Cut in the chilled butter until the mixture resembles coarse crumbs.
  4. In another bowl, whisk together heavy cream, egg, Meyer lemon juice, and vanilla extract. Pour into dry ingredients and mix gently until just combined.
  5. Turn dough onto a floured surface and knead lightly. Shape into a disc about 3/4 inches thick and cut into eight wedges.
  6. Place scone wedges on a baking sheet, brush tops with heavy cream, and bake for about 12 minutes until golden brown.
