  • 3 tablespoons olive oil
  • 2 teaspoons lemon zest
  • 4 garlic cloves
  • 2 Meyer lemons, thinly sliced
  • Fresh oregano
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • ½ teaspoon dried basil
  • ½ teaspoon dried thyme
  • ¼ teaspoon dried rosemary
  • ¼ teaspoon garlic powder
  • ¼ teaspoon red pepper flakes

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, combine lemon zest, salt, pepper, basil, thyme, rosemary, garlic powder, and red pepper flakes.
  3. Place chicken on a baking sheet. Drizzle with 1 ½ tablespoons olive oil and sprinkle the seasoning mixture over each piece.
  4. Add garlic cloves and sliced lemons around the chicken. Drizzle with remaining olive oil.
  5. Roast for 35-40 minutes until the internal temperature reaches 165°F (74°C). Garnish with fresh oregano before serving.
