  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter (room temperature)
  • 1 cup granulated sugar
  • 3 large eggs (room temperature)
  • 1/2 cup Meyer lemon juice
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F. Grease or line an 8×8-inch baking dish with parchment paper.
  2. For the crust, cream together the butter and powdered sugar until light and fluffy. Mix in the flour and press the dough into the bottom of the prepared pan. Bake for 15-20 minutes until lightly golden.
  3. For the filling, whisk together granulated sugar, eggs, flour, baking powder, and Meyer lemon juice until just blended.
  4. Pour the filling over the baked crust and return it to the oven for another 20-25 minutes or until set.
  5. Allow to cool completely before cutting into squares and dusting with powdered sugar.
