  • 1 (15 ounce) can chickpeas (rinsed and drained)
  • 2 mini cucumbers (chopped)
  • 1 tablespoon red onion (chopped)
  • 1 tablespoon fresh oregano (chopped)
  • 1 tablespoon fresh parsley (chopped)
  • 1/2 red bell pepper (chopped)
  • 1 cup little tomatoes (halved)
  • 1/2 cup Kalamata olives
  • 3.5 ounces feta cheese (packed in oil & herbs if possible)
  • 2 tablespoons olive oil
  • 1/2 tablespoon lemon juice
  • 1 clove garlic (minced)
  • salt & pepper to taste

Instructions

  1. Drain and rinse the chickpeas thoroughly, then place them in a large salad bowl.
  2. Chop the cucumbers, red onion, oregano, parsley, red bell pepper, and tomatoes into bite-sized pieces. Add them to the bowl with the chickpeas.
  3. In the same bowl, drizzle olive oil, squeeze in lemon juice, and add minced garlic. Toss gently until all ingredients are well-coated. Adjust seasoning with salt and pepper to taste.
