  • 1 lb boneless, skinless chicken breasts
  • 1.5 cups whole wheat orzo
  • 2 cups grape tomatoes
  • 2 cups spinach
  • 1/2 cup kalamata olives
  • Fresh herbs (basil and parsley)
  • Olive oil
  • Garlic
  • White grape juice

Instructions

  1. Heat olive oil in a large sauté pan over medium-high heat. Season chicken with salt and pepper, cooking for about 5 minutes on each side until golden brown and cooked through. Remove from pan.
  2. In a pot, boil water and cook whole wheat orzo according to package instructions until al dente.
  3. In the same pan, add more olive oil and sauté minced garlic for one minute. Add halved grape tomatoes and white grape juice, cooking for about 5 minutes until softened.
  4. Stir in cooked orzo, kalamata olives, chopped spinach, fresh herbs, spices, and optional feta cheese until combined.
  5. Slice the chicken and serve atop the orzo mixture.
