  • 300 g small pasta (ditalini or macaroni)
  • 1 cup shredded purple cabbage
  • 1 cup shredded green cabbage
  • 1 cup shredded and chopped carrots
  • 1 cup diced bell peppers
  • 1 cup diced celery
  • 1/2 cup diced red onion
  • 1/2 cup chopped scallions
  • 1/2 cup chopped parsley or fresh herbs of choice
  • 1 cup mayonnaise (vegan suggested)
  • 1/4 cup apple cider vinegar
  • 2 teaspoons dijon mustard
  • 2 teaspoons pure maple syrup
  • 1/2 teaspoon granulated garlic
  • 1/4 teaspoon celery seed
  • Salt and black pepper, to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse with cold water to cool.
  2. In a small bowl, mix together the dressing ingredients until well combined.
  3. In a large bowl, combine the cooled pasta with all the chopped vegetables. Pour the dressing over the salad and mix gently until everything is well coated.
  4. Chill in the refrigerator for at least 30 minutes before serving to enhance the flavors.
