  • 1 cup all-purpose flour
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 cup buttermilk
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup sliced jalapeños
  • 1/4 cup chopped green onions
  • Vegetable oil for frying

Instructions

  1. Peel and cut the russet potatoes into thin fry shapes. Rinse in cold water and pat dry.
  2. In a large bowl, mix flour, Cajun seasoning, garlic powder, onion powder, paprika, salt, black pepper, and optional cayenne pepper.
  3. Dip each fry into buttermilk and coat with the seasoned flour mixture.
  4. Heat vegetable oil to 350°F (175°C) in a deep fryer or large pot. Fry the coated fries in batches for about 4-5 minutes until golden brown.
  5. Remove from oil and drain on paper towels. While still hot, sprinkle with shredded cheeses and top with jalapeños and green onions.
