  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • ¼ cup chopped nuts (pecans or walnuts)
  • ½ cup unsalted butter (softened)
  • 8 oz cream cheese (softened)
  • 1 cup granulated sugar
  • Zest and juice of 1 lemon
  • 8 oz whipped topping (thawed)
  • 2 boxes instant lemon pudding mix
  • 3 cups cold milk

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix flour, sugar, and chopped nuts. Add softened butter; blend well. Press into an ungreased 9×13-inch pan. Bake for 15 minutes until golden.
  2. In another bowl, beat cream cheese and sugar until smooth. Mix in lemon zest and juice; fold in half of the whipped topping.
  3. Spread cream cheese mixture over cooled crust evenly. Whisk pudding mixes with cold milk until thickened (about 1 minute). Pour over cream cheese layer.
  4. Top with remaining whipped topping, garnish with lemon zest and slices. Chill for at least two hours before serving.
