- 1 Tbsp olive oil
- 2 large eggs
- 1 garlic clove
- 1/2 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1 cup Parmesan cheese
- 3 Tbsp all-purpose flour
- 8 Tbsp unsalted butter
- 2 garlic cloves
- 1/4 cup lemon juice
- 1/4 cup chicken broth
- 1 Tbsp parsley (to garnish, optional)
- 1/2 lemon (sliced for garnish, optional)
- Cut each chicken breast in half lengthwise and pound to even thickness.
- In one bowl, whisk eggs, minced garlic, Italian seasoning, salt, and pepper. In another bowl, mix grated Parmesan cheese with flour.
- Dip each piece of chicken in the egg mixture then coat with the Parmesan mix.
- Heat olive oil in a skillet over medium heat and cook chicken until golden brown, about 4-5 minutes on each side.
- In a separate saucepan, melt butter with minced garlic, then stir in chicken broth and lemon juice; simmer for two minutes.
- Pour the sauce over the cooked chicken and serve warm.
