  • 1 1/2 lb chicken breast
  • 1 Tbsp olive oil
  • 2 large eggs
  • 1 garlic clove
  • 1/2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1 cup Parmesan cheese
  • 3 Tbsp all-purpose flour
  • 8 Tbsp unsalted butter
  • 2 garlic cloves
  • 1/4 cup lemon juice
  • 1/4 cup chicken broth
  • 1 Tbsp parsley (to garnish, optional)
  • 1/2 lemon (sliced for garnish, optional)

Instructions

  1. Cut each chicken breast in half lengthwise and pound to even thickness.
  2. In one bowl, whisk eggs, minced garlic, Italian seasoning, salt, and pepper. In another bowl, mix grated Parmesan cheese with flour.
  3. Dip each piece of chicken in the egg mixture then coat with the Parmesan mix.
  4. Heat olive oil in a skillet over medium heat and cook chicken until golden brown, about 4-5 minutes on each side.
  5. In a separate saucepan, melt butter with minced garlic, then stir in chicken broth and lemon juice; simmer for two minutes.
  6. Pour the sauce over the cooked chicken and serve warm.
