  • For the glaze: 3/4 cup powdered sugar
  • 1 1/2 tablespoons fresh lemon juice
  • Zest of 1/2 lemon

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare an 8×8" baking pan by spraying it with cooking spray or lining it with parchment paper.
  2. In a large bowl, beat together softened butter, granulated sugar, and lemon zest until light and fluffy. Add eggs one at a time while mixing well after each addition. Stir in fresh lemon juice.
  3. Gradually mix in all-purpose flour and baking powder until just combined.
  4. Pour the batter into the prepared pan and smooth the top. Bake for 20-25 minutes or until a toothpick comes out clean from the center.
