  • 1/2 cup (100 g) light brown sugar, packed

  • 1 large egg, room temperature
  • 3/4 teaspoon vanilla extract
  • 2 1/4 cups (280 g) all-purpose flour, spooned and leveled
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon kosher salt
  • 1/3 cup freeze-dried blueberries, chopped
  • 1/4 cup coarse sanding sugar, for topping

Instructions

  1. In a mixing bowl, combine granulated and light brown sugars with fresh lemon zest until fragrant.
  2. Add room temperature butter and mix until light and fluffy.
  3. Incorporate egg and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together flour, baking soda, cream of tartar, and salt; gradually add to wet mixture.
  5. Gently fold in freeze-dried blueberries.
  6. Chill dough for 30 minutes; preheat oven to 350°F (175°C).
  7. Scoop dough onto parchment-lined baking sheets; roll in coarse sugar.
  8. Bake for 8-9 minutes until edges are set; cool before serving.
